Itty Bitty Shortcakes

I live in Mobile, Alabama and let me tell you something:  IT'S HOT OUTSIDE!  Its not just hot, its humid and steamy.  That's way worse than a dry heat.  I'm an outdoors person and I know a few things about this season.  Summertime is mosquito season (ick) and banana spider season (double ick), but one thing that makes it all worth while is the fact that it is strawberry season!


 So I made these adorable little Strawberry Shortcakes to celebrate one of the good things about summer in the Deep South.  But this isn't just any shortcake.  First, there is a layer of moist Vanilla Cake on the bottom.  Then it is topped with fabulous homemade Almond Whipped Cream.  Finally, I put the whole thing together with Red Wine Strawberries.



Red Wine Strawberries

2 cups fresh strawberries, washed and sliced

2 Tbs granulated sugar

2 Tbs red wine (whatever you like to drink)


Place all ingredients in a bowl and stir to combine.  Cover and refrigerate for at least 2 hours.  Use as shortcake topping or just eat plain!  These strawberries are fantastic!

Sounds amazing! I have a post about you, and the fabulous cookbook you sent me going up tomorrow! It's really hot here in California too, but if I had to deal with banana spiders, I would run screaming for the hills! :) No joke! I'd have to move.

So I'm a bit of a chicken and have yet to create a blog exlusively for my creations- but man this makes me miss the South! I spent 5 years in OK, and MISS IT SO MUCH- Utah pales(greatly at that) in comparison as far as people, food, and weather! I saw your cookbook on Joy's blog and it made me long even more so for that comfort food of the south- REAL fried chicken, fried okra(something 90% of Utahns have never heard of) and everything full of calories and flavor. Hear you me, I could use some comfort food lately! Great blog, it'll be added to my favs, let me know how I can get my hands on one of those recipe books!

I haven't traveled around the country much but there are two things I've heard are big differences between the south and, well, everywhere else: 1) We have Sweet Tea and 2) We are the most polite people ever. Come on back and we'll treat ya nice! Thanks for your comments. Ever tried fried pickles? ;)

on average I've moved every two years of my life... I'm not THAT old... but about 10-12 times. Its ridiculous- I've spent time in the midwest(omaha, not quite the south) Las Vegas, California, Oklahoma, my parents live in Portland now, and of course, my hated UT...
Even while living in OK, sweet tea is not my thing, but I will say that fried pickles- YUM. One of these days when my husband becomes a student of life, instead of a student of a major university that charges ridiculous tuition, we'll make some money and that cookbook will be added to my collection- till then, post some of those bad boys! =) too bad we're not closer, I've a feeling we could be friends! Congrats on the marriage... three years here and going strong! YAY for the new camera, and now I'm going to shut up and go do some laundry! :)
